Waffles : Pumpkin Spice Latte Edition

Easy Recipe, I know it seems like a lot of ingredients, but they're all things I had on hand. I've made this before without pumpkin and it turned out great, I just added more coffee for extra liquid that time.

Vegan + Gluten Free
Makes: 3 large waffles

Wet Ingredients (small bowl)
1/4 cup ground flax seed
1/2 cup warm water
1/2 cup pumpkin
1 cup coffee
2 tbsp coconut oil Melted
2 tbsp maple syrup (or honey, or sugar)

Dry Ingredients (big bowl)
1 tbsp baking powder
1 cup gluten free flour
1 cup almond meal
2 tsp cinnamon
1 tsp Ginger
1/4 tsp allspice
1/4 tsp salt


Mix ground flax seed with warm water in small/medium sized bowl and let it absorb.

Combine dry ingredients in larger mixing bowl and blend until spices are all evenly distributed. 
Mix the rest of the wet ingredients in with the flax, then add to our dry ingredients. stir thoroughly. Taste the batter and add more syrup or sugar if you'd like tot be sweeter. Or more cinnamon. 

The waffles will puff up quite a bit once cooked, so try not to over do it in the waffle maker (I did the first time)
