Clingy Carrot Soup/Things in the Fridge

This soup is made from amazing things I happened to have. I apologize if you do not have these things, but I still recommend going to purchase them just to be more like me. 


The Recipe!

1 leek

1 giant, or 2 normal size cloves of garlic

salt, pepper

1/4 teaspoon red pepper flakes

5-6 carrots (a bunch (it's ok if they're ugly, ugly carrots need love too))

3 cups chicken stock (or 4, enough to cover all your ugly carrots, no one wants to see that)

2 tbsp tomato paste

1 tbsp curry powder

1/4 tsp cinnamon (or more, I just shook cinnamon over the pot till some amount exploded out)

1/4 tsp ground ginger

1/2 cup coconut milk

bunch of basil, get like a nice handful of big leaves

cut up the good part of the leek into half moons, chop ginger and saute olive oil until cooked, a few minutes. Try not to burn garlic. While on stove add salt, pepper, and red pepper flakes. 

add carrots! not whole, dice those suckers first. Cover with chicken stock, bring to a boil and cook until carrots are easy to poke with a fork, maybe 40 minutes. 

add all spices! while it's cooking. 

BLEND THIS STUFF. this is a creamy soup, so using either an immersion blender, or normal blender, blend until smooth. Like longer than you think you should blend it. That's the appropriate amount of time. 

Towards the end of blending process add coconut milk and basil, go ahead and blend some of the basil so it's incorporate. 

Then enjoy! because this is delicious. and made of things that I didn't have to go to the store for!.
