Paleo Chicken Banana Casserole (flygande jakob)

Recipe adapted from The Nordic Cookbook by Magnus Nilsson. I'll probably never know if this really does taste like the original, but it has to be close. Really hope I don't offend anyone by removing the dairy from the original recipe! Also, I know peanuts aren't paleo, sometimes you just have to live a little. 

This may not be the prettiest dish I've ever made but that didn't make it any less delicious, with the bananas being my favorite part. It reminds me of food network shows where every chef is making an "elevated" something by using more expensive ingredients, and if we wanted to try and recreate this dish the grocery receipt would bring tears. So this is chicken casserole, with bananas. Because bananas are delicious, and make everything better. 

Serving suggestion: have with cauliflower rice and/or a side salad while listening to Abba. 

Ingredients

1 chicken, pre-cooked, cooled. Or just a 1lb of cooked chicken and then 1lb of chicken things, because let's face it, that's the best part. 

1 tbs italian seasoning

2 bananas, sliced 

14 oz can of coconut cream (I got the one from trader Joe's, the original called for heavy cream whipped)

1/2 cup of heniz chili sauce (recipe below)

4 slices of bacon, cooked

1/2 cup of salted peanut

 

Paleo Heinz Chili Sauce

6 oz can of tomato paste

1/2 cup of water

1/3 cup of honey or maple syrup

1/2 cup of white vinegar

1 tbs granulated onion

1 tsp chili powder

1/2 tsp salt

1/2 tsp liquid smoke

1/4 tsp allspice

1/4tsp garlic powder

We'll start with the chili sauce. Combine ingredients in sauce pan and mix well, simmer, stirring occasionally until it reaches desired thickness. For me it was about 5 minutes. This recipe makes more than you need, but you can always freeze it or enjoy it with some sweet potato fries later in the week. 

Pre-heat oven to 425 F and lightly oil a 9X13 baking dish

Layer chicken on the bottom of the dish, followed by bananas. Fold in 1/2 cup of the chili sauce with the coconut cream before spreading over our chicken and bananas. 

Cook until Caramelized on the top, 35-45 minutes. Top with peanuts and bacon. Let Cool 10 minutes and then serve with cauliflower rice + salad.
